Shamrock Plants for St. Patrick’s Day

Growing up we had a large shamrock plant at the end of our kitchen table that faced the north window. It survived by that window year after year and blessed our family kitchen. My First of Many St. Patrick’s Day Dinners

Our family is German and Italian, and we never had a tradition of corned beef dinner. All the stories I’ve heard about making the perfect corned beef involved an extensive slow-cooking process. So I’ve never attempted to try making corned beef.

My first attempt was when I joined our church committee that put on a monthly potluck dinner. When it was time to plan for the March potluck we were all given a corned beef from Costco and asked to bring it cooked for the potluck main dish.I wasn’t sure what a German and Italian cook was to do.

Having little ones at home I did not have the time to baby a new recipe for hours. I turned to my trusty Instant Pot / Electric Pressure Cooker.

I was watching my favorite Chef Wolfgang Puck on HSN and he was presenting his Electric Pressure Cooker. I already had one but I love to watch him cook as I always get new ideas. He opened a lid and marveled at how quick and easy corned beef is to cook in the electric pressure cooker.

He was stressing that it only takes 90 minutes instead of hours. Wow, that was for me.This was my answer and I now make our corned beef and cabbage 3 or 4 times a year with this quick method.

How To Make Corned Beef In The Instant Pot / Electric Pressure Cooker

To make it even more simple I use 4 beef bouillon cubes in 4 cups of water I heat in the microwave. I add this to the pressure cooker with a small onion and 4 garlic cloves. Mix in the seasoning packet and place the whole 3 to 4-pound corned beef. Secure the lid and turn the level to seal. I put the dial on 90 minutes on high pressure with a 15-minute natural release.

I then take my time to cut up carrots, potatoes, and cabbage and keep them ready for when the meat is done. When the timer goes off after 90 minutes allow to natural release for 15 minutes. Remove the lid and take the corned beef out. I put mine in an ovenproof pan and covered it with foil. I then heated my oven to warm.

I then placed the carrots, potatoes, and cabbage in the liquid in the pressure cooker and cooked for 6 minutes after securing the lid again and setting the knob to seal. It was hard to believe but in 6 minutes the vegetable was cooked to perfection and dinner was ready. When the 6 minutes are up, do a fast release.

FAQs

What is the secret to best corned beef? ›

Simmering corned beef on the stovetop is a tried-and-true method that results in very tender beef. One of the keys to simmering corned beef correctly is the amount of water in the pot. When there's not ample liquid to cover the meat, your dreams of tender corned beef may be replaced by a tough, chewy result.

What not to do when cooking corned beef? ›

Not rinsing the meat before cooking.

Do this instead: Whether you bought a ready-to-cook corned beef or you cured your own, rinse the meat several times under cool water to remove any excess salt. But don't think this means you're rinsing away all the flavor; by this point, the meat is fully infused with it.

What is the best and easiest way to cook corned beef? ›

Slow cooker corned beef brisket is easy to make using a crock pot, adding chopped vegetables, herbs and spices to the meat, and cooking for 8 to 10 hours on low heat. Another option is to bake corned beef and glaze it with stone ground mustard and brown sugar to flavor the dish.

Why does my corned beef always come out tough? ›

Question: Why is my corned beef always so dry and chewy? Answer: Because the brisket is a naturally tough cut of beef, it needs special TLC to become tender and moist. Slow cooking at a low temperature gives the collagen in the meat time to become soft and gelatinous, which makes your meat tender.

Does corned beef get more tender the longer you cook it? ›

Information. Corned beef is made from one of several less tender cuts of beef like the brisket, rump, or round. Therefore, it requires long, moist cooking. Corned beef is safe once the internal temperature has reached at least 145 °F, with a three minute rest time, but cooking it longer will make it fork-tender.

What gives corned beef its unique flavor? ›

The flavor profile often includes bay leaf, black peppercorn, mustard seed, dried red pepper and coriander. If that blend sounds familiar, it's because it's same list of spices that are packaged as pickling spice. Not surprising, since corned beef and pickles are commonly made in the same place: a deli.

What happens if you forget to rinse corned beef? ›

Depending on the pickling solution used for the meat, you may be in for a saltier meal than you bargained for if you cook the meat without rinsing it. And don't worry: Rinsing won't make the beef taste bland! The flavor is infused deep into the beef during the curing process.

Should you rinse corned beef before you cook it? ›

It's a good idea to do so. Don't worry that you will be rinsing away flavor. Rinsing the corned beef means it will be less salty. Also, keep the seasoning packet if one came with it.

Is it better to boil or bake corned beef? ›

The bottom line: If you're a traditionalist, go ahead and keep boiling away. But baked corned beef is definitely worth a try.

Do you use the liquid in the corned beef package? ›

Place the brined corned beef in a large pot or Dutch oven along with the liquid and spices that accompanied it in the package. Pour in enough water to cover the beef, then bring the water to a boil on the stovetop. Reduce the heat to a simmer, and cover the pot.

When boiling a corned beef do you put the fat side up or down? ›

STOVE: Place brisket fat-side up in a large pot and cover it with water. Bring the water to a boil; then reduce the heat and simmer, allowing about 1 hour per pound. Vegetables may be added during the last 20 to 30 minutes of cooking. Cook vegetables to desired tenderness.

Is corned beef healthy? ›

While it provides protein and nutrients like iron and vitamin B12, corned beef is relatively high in fat and sodium. It's also a source of certain compounds that may increase your risk of cancer.

What tenderizes corned beef? ›

Because corned beef comes from brisket, a tough cut of meat. You need its connective tissue to break down so you can have tender results. Some like to braise their corned beef in an all-water liquid, with various spices and salt; others add beer to the mix to further tenderize the meat.

What is the red liquid in corned beef package? ›

Corned beef in tins - only has a small amount of fat incorporated in the meat. The stuff that's pre-sliced from the deli counter has no liquid in it either ! How can you use red liquid from thawed meat? That runny red liquid is myoglobin.

Why do you soak corned beef before cooking? ›
